Demand forecasting model for perishable stock

Project Description

We run six retail outlets selling fresh produce. We over-order and throw away roughly 12% of stock, or we run out by 6pm. Both are expensive. We have two years of daily sales by SKU by store, plus festival dates and weather if that helps. We want a weekly order recommendation per store, and — more importantly — a plain explanation of what drives it, because our store managers have to trust it enough to actually follow it. A black box they ignore is worth nothing to us.
